Fish pie


Peel and boil potatoes – mash
Line a large Pyrex dish with washed spinach
Add grated carrot and chopped celery (or any veg you have in the fridge)
Add uncooked fish. I used salmon, coley, prawns and sardines.
Mix a tub of Creme Fraiche (I used light) with a handful of grated cheddar.
Dollop this on top of the fish – season with pepper
Top generously with mashed potato (you can sprinkle the top with cheese if you want)
Bake in the oven until bubbling and the top is beginning to go golden brown (it took about 40 minutes in the top oven of the Esse)
